
Taco Meat
I know that dumping a packet of seasoning into the beef is pretty easy, but this really doesn’t take much more time, and it’s so much better and healthier!
Ingredients
- 1 tablespoon olive oil
- 3/4 cup onions finely chopped
- 3 garlic cloves minced
- 1 pound ground beef
- 1 1/2 tablespoons ground cumin
- 1 1/2 tablespoons chili powder
- 1/2 teaspoon ground chipotle powder
- 3/4 teaspoon kosher salt
- 1 cup beef broth
- 1/8 cup tomato paste
Instructions
- Set a 12-inch sauté pan over medium heat and add the olive oil. Once hot, place the onions in the pan and sauté until translucent, 3 to 4 minutes. Add the garlic to the pan and continue to sauté until fragrant, about 1 minute. Add the beef to the pan and cook, breaking the pieces up as they cook, until the meat is browned, about 8 to 10 minutes. Strain the grease from the pan.
- Season meat with the cumin, chili powder, chipotle pepper and salt. Add the beef broth and tomato paste to the pan and bring to a simmer. Cook the meat, stirring occasionally until most of the liquid has evaporated, about 20 minutes. Remove from the heat and serve with the taco shells and whatever toppings you like.
