Thai Cucumber Salad

This is a very refreshing salad that goes great with a spicy meal. You can literally make it in 5-10 minutes, depending on your chopping skills. The original recipe added chopped peanuts as pictured. I didn’t but feel free!

    English cucumbers
  • 1/4 Cup
  • 1/2 Cup
    rice wine vinegar
  • 1
    jalapeno, chopped
  • 1/2 Cup
    chopped cilantro
  • 1/2 Teaspoon


  1. Cut the cucumber in half lengthwise. (If you use a regular cucumber instead of English, peel it first, and then remove seeds after cutting in half.) Cut again in quarters, then chop into 1/2-inch pieces.

  2. Whisk together the sugar and vinegar in a mixing bowl until the sugar has dissolved. Add the cucumbers, jalapeno peppers, cilantro and salt; toss to combine. Enjoy!
