
Make Ahead Breakfast Sandwiches
This makes about 12 sandwiches, depending on how much filling you put in them. I usually make a can of Grands biscuits, and then use English Muffins for the rest. You can also use any kind of cheese you want.
Ingredients
- 12 biscuits and/or English muffins
- 1 pound turkey sausage
- 16 eggs
- salt & pepper
- 12 slices American cheese
Instructions
- Bake biscuits according to package directions and/or toast English muffins.
- Meanwhile, start browning the sausage in a skillet, and beat the eggs in a bowl.
- Add eggs to the browned sausage, and cook until the eggs are done. Season with salt and pepper.
- After biscuits have cooled, slice in half.
- To assemble the sandwiches, I use a 3.5 inch round biscuit cutter. Put the cutter on a piece of wax paper, which will be used to wrap the sandwich. Put the bottom half of the biscuit in the cutter. Top with 1/2 slice American cheese, 1/2 cup of egg mixture, another 1/2 slice of cheese, and the top of the biscuit.
- Remove the biscuit cutter, then wrap the sandwich in wax paper and put them in large freezer bags. Place them in the freezer.
- To reheat, leave sandwich in wax paper and microwave on high for 30 seconds. Flip the sandwich and heat for 30 seconds, then flip again and heat for an additional 30 seconds.
