Quinoa is a great alternative to rice as a side dish and is a lot healthier. Just try it! Some quinoa needs to be rinsed first so check your package for directions.

Ingredients

  • 2 Tablespoons
    butter
  • 1/2
    small onion, chopped
  • 2 Teaspoons
    chopped garlic
  • 1 Cup
    uncooked quinoa
  • 2 Cups
    chicken broth
  • 2 Tablespoons
    chopped fresh parsley
  • 1/2 Tablespoon
    chopped fresh thyme
  • 1/4 Teaspoon
    salt
  • squeeze fresh lemon juice (optional)

Instructions

  1. Melt butter in a saucepan over medium heat. Add onion and garlic and cook until the onion is softened.

  2. Add the quinoa, and toast, stirring occasionally, until lightly browned, about 5 minutes. Stir in broth, and bring to a boil. Reduce to a simmer, cover, and cook for 25 minutes, or until quinoa is tender.

  3. Add in parsley, thyme, and salt. Sprinkle with lemon juice, and serve.
