Quinoa is a great alternative to rice as a side dish and is a lot healthier. Just try it! Some quinoa needs to be rinsed first so check your package for directions.
Melt butter in a saucepan over medium heat. Add onion and garlic and cook until the onion is softened.
Add the quinoa, and toast, stirring occasionally, until lightly browned, about 5 minutes. Stir in broth, and bring to a boil. Reduce to a simmer, cover, and cook for 25 minutes, or until quinoa is tender.
Add in parsley, thyme, and salt. Sprinkle with lemon juice, and serve.
