These are great served with rolls that have been toasted in the oven, with cheese melted on them. Try my homemade French Bread Rolls! You can also top the sandwiches with sauteed onions and/or mushrooms.
Remove and discard all visible fat from the roast. Place trimmed roast in a slow cooker.
Add bay leaf, pepper, rosemary, thyme, garlic powder, soy sauce and beef broth to the slow cooker. Add just enough water to almost cover the roast. Cover, and cook on low for 10 hours or until meat is tender.
Remove meat from broth, then slice very thin, and return back to the slow cooker for another hour.
Transfer meat to a serving platter, and use the broth for dipping.
