You can either serve this as a salad, or as a salsa with tortilla chips. Fresh corn off the cob is best, although you can use thawed frozen corn if it is not in season. But for the love of all that is holy, please not use canned corn. Ick!

You can either make this Greek dish on skewers, or if you’re lazy (or don’t have a grill) do what I did. Put the ingredients in a baking dish and roast at 400 degrees for 20-25 minutes. Make sure you serve it with my Tzatziki!

I recently made this, and it turned out to be the moistest pork tenderloin I have ever made! You can either bake it in the oven as noted, or grill outside.
This tastes just like a delicious pasta dish you would get at a restaurant, and it seriously takes only 1/2 hour to make.
The garlic sauce for this meatloaf is what makes the recipe! If I’m just feeding a few people, I divide the loaf in half before baking and freeze one. And if I can’t find pre-packaged meatloaf mix, I use a pound of ground beef and a pound of ground pork.
If you think Bearnaise is hard to make, you will think that no longer! This goes perfect with steaks of any kind.
